I love the Taberna tradition of a Cava tasting or two in December! There’s a lot to explore this year. The D.O. Cava is undergoing drastic changes, with several smaller producers pulling out. Pepe Raventos started something big when he moved to create a new appellation, Conca del Riu d’Anoia, with its far more strict regimen for both viticulture and viniculture. The new denomination of Conca (not yet official) reflects the grower Champagne movement in France, requiring all fruit to be estate-grown or controlled, as well as longer aging time on the lees. The progression is toward smaller, more artisanal wineries that produce sparkling wines of character and finesse. It is more exciting than complicated, more delicious than daunting. I have an exquisite set of beautiful sparkling wines from Spain planned for us. Let’s taste and get merry! Limited to 8 people.
