What is a taberna? A taberna is a casual place for a wide variety of food and drink. Tabernas are where young friends gather in large groups before the movies or a party for shared plates of food, wine or beer, spirited conversation, a little flirtation. Tabernas are where families come to celebrate each other or a festivity, in jeans or Sunday best. Tabernas are where sexagenarian men are often found in heated dispute over soccer and politics, quaffing and gesticulating with equal fervor at the bar. Tabernas are where couples go on a first date, relaxing somewhat in the familiarity and commonness of good, traditional food. Tabernas are where you can have the first coffee and tortilla of the day, eat your lunch on the run, enjoy a tapa and a beer as you pore over the contents of your briefcase, or meet your friend from out of town for hours of reminiscing. Tabernas are where Spaniards always take their foreign friends so that they may taste Spain at her hearty best, and bask in the very Spanish warmth of sharing honest food and good wine in an informal atmosphere.
Taberna de Haro is fashioned after the tabernas of Madrid, which often serve the cuisine of several regions from Spain rather than just focusing on one. The following dishes include personal favorites from our travels throughout Spain and family recipes from Madrid. We hope you enjoy them.
We proudly use only Country Hen organically raised eggs. Whenever possible, we use locally grown produce. All our beef comes from the River Rock Farm in Brimfield, MA.
