JEREZ - SHERRY - JEREX

Sherry is a fortified wine with unique qualities, produced exclusively in Jerez de la Frontera, Spain.  We offer 10 examples from the very wide gamut available.  The first two on our list, Manzanilla and Fino are very dry, light in color and weight, and are served as cold aperitifs. The following three, Amontillado, Dry Oloroso, and Palo Cortado are darker, weightier types of sherry, and are served at room temperature either as an aperitif or as an accompaniment to a cheese or sweet course.  The final two, Old East India Solera and Pedro Ximenez, are even darker, richer, and are rather sweet.  They too are served at room temperature, appropriate before or after dinner.  Our sherries are by Emilio Lustau.

CAVA (SPARKLING WINE)

GRAN GESTA BRUT ROSE (Covides, D.O. Cava, San Sadurni d'Adonia, Barcelona). Made with 100% trepat, this cool pink specimenbursts with aromas of ginger, strawberry jam, and toasted walnuts. In the mouth, the tangerine and vanilla suggestions are refreshing and enjoyable. Left on its lees for 12 moths, this cava has a subtle yeasty qualtiy to it.  $34
GRAMONA GRAN CUVEE 2007 (Bodegas Gramona, D.O. Penedes, San Sadurni d' Anoia) This beautiful cava, made from 50% xarel-lo, 40% macabeo and 10% chardonnay, is rich with aromas of beeswax, fresh apricot & a hint of cinnamon. Thirty months of its life were spent on lees, and that gorgeous, yeasty complexity is apparent in the nose and in the mouth. The wine sighs on the tongue like an ethereal ginger mousse with suggestions of oyster liquor and celeriac. $35
GRAMONA IMPERIAL 2004 GRAN RESERVA  (Elaborador Gramona, D.O. Cava, San Sadurni d'Anoia). The nose is gently floral and subtly yeasty with notes of almond and apricot. Layered and complex in the mouth, with ginger and fresh berries speaking luder that the lees. Toast and fancy marmalade comes to mind. It is a clean mysterous wine, and finishes like and ebbing tide of fine and sexy brininess. Like an El Bulli creation of oyster with a spun caramel shell.  $50
AVINYO CAVA BRUT ROSAT RESERVA (Esteve Nadal, D.O. Cava, Avinyonet del Penedes). The hue is a lovely pale cherry, with a hint of orange. Subtly frangant with flowers, rasberries, and butterscotch. This cava is a true wine experience, full-bodied and deep, with a crowing of exited. $30                                                             CASTELLROIG BRUT NATURE (Bodegas Castelroig, D.O. Cava, Vilafranca del Penedes). Pings of cinnamon and yeasty high notes give away lo lusty Mediterranean aromas such as quince and thyme. There is a foamy, ginger-scented crown on top of subtle but ripe starfruit, and a whiff of natural marshmallow. This no-dosage, grower-cava is dry, beautiful, stoney, and sophisticated. $45                                                                        RECAREDO BRUT NATURE 2006 (Cava Recaredo, D.O. Cava, San Sadnurni d'Anoia). The aromas are profoundly alluring - lemon, vanilla, wet sand, nutmeg, fine cordial. The complexity is apparent, as is the care and tradition in this biodynamically-farmed, family estate. The bubbles are a lovely mousse of straw, toast and white raspberries. Twenty nine months on the lees lends this wine a depth of character you'll envy! A no-dosage beauty!. $65                                                                                                                                                 HUGUET BRUT NATURE 2005 GRAN RESERVA (Huguet de Can Feixes, Cabrera de Anoia, Penedes). This clean lake of complex freshness thrills your nose with aromas of fine yeast and lime zest, the fills your mouth with the finest, lightest bubbles. Like and ethereal mousse of minerality, white raspberries and wet stone. Disgorged in September of 2008, this elegant, no-dosage cava in wonder $50 inwonder $50                                                                                                                                                              RECAREDO GRAN RESERVA 2003 (Cava Recaredo, D.O. Cava, San Sadurni d'Anoia). A lush, fruity aroma of fresh figs and lemons brushed with a note of caramel belies the completely dry wine to follow. The texture is creamy yet bright with infinity minute bubbles that burst into the most supple, giving cava imaginable. Minerals alight and the earth is a celebration in this complex, sublime cava. $95                                                        GRAMONA CELLER BATLLE 1998 (Elaborador Gramona, D.O. Cava San Sadurni d'Anoia). This superlative cava is like the finest of champagnes, with its elegant aromas of toasted brioche and suggestion of white nectarine. Five years on the lees are apparent in its haunting, almost savory flavor profile - a waft here of white mushroom, a note there of fine bread yeast, a bit of malt. There are undeniable Spanish aromas of almond and a fervent intensity of beauty within each of the tight bubbles.
